A STROUD mum has created a 'brownie survival plan' for all those struggling with lockdown, 'Veganuary' and anything else a delicious treat could help with.

Veganuary, in case you haven't heard of it, is a resolution to eat a plant-based diet throughout January.

Beth Stapleton runs a small business - Baked by Beth - from her own kitchen in Rodborough, making plant based cakes, brownies and raw bars.

And for all those needing a little vegan treat to keep them going, Beth has come up with her 'brownie survival plan'.

Every week, the mum-of-two is creating a new brownie flavour for her customers.

“The world seems to have turned upside down, again,” she said.

“So we all need some nourishing treats more than ever.

“I’ve been escaping into my thoughts as much as possible by dreaming up new brownie flavours and offerings to make lockdown a bit more bearable.

“Here’s my brownie plan: each week I’m going to be creating a new flavour that you can order to arrive with you in time for the weekend, by collection, post or free GL5 delivery on Fridays.”

This week’s brownies are flavoured with a delicate hint of rose water, which Beth says is great partnered with dark chocolate, and they are then decorated with edible flowers and leaves.

Beth is a self-taught baker who started experimenting with cake recipes as a child. She finally decided it was time to start her own cake business in 2016 after having her first daughter.

Baking from her own kitchen, she starting supplying local cafes and trading at Stroud Farmers Market. Demand grew for her vegan, gluten and refined sugar free cakes and so she gradually developed her own set of recipes to make her whole range plant based.

She loves the challenge of keeping her cakes delicious whilst also making them healthier with lots of nutritious ingredients, although she said this is partly just to get her two little girls to eat plenty of nourishing nuts and seeds.

Beth’s favourite part of the process is the decoration and making each cake different.

She forages in her garden for a colourful selection of flowers, fruits, leaves and herbs then sets to making every cake look as beautiful as she can.
