A NEW farm shop will open at the former site of an old butcher's.

Fillet & Bone, will include a butcher and fishmonger, and is set to open in the spring.

It will replace the old L Smith family butcher’s shop in High Street,Chipping Campden which closed in October 2016 after 100 years of trading.

Entrepreneur Chris Gates and his partner Pat Willins have been working to create a contemporary shop.

Mr Gates said: "We moved into the old flat above the shop as soon as we bought the building.

“But it’s been strong demand locally that inspired us to re-open the shop as Fillet & Bone.

“The centrepiece will still be fresh meat, but it’ll be complemented by fish and bakery and dairy products.

“We want to focus on the supply of high quality, locally-sourced foods because we strongly believe that the shorter the food chain from field to plate, the better the quality of product and the less impact on the environment.”

Retail operations manager Barry Hancox will head up the day-to-day running of the shop and he has decades of experience in the food industry.

He is formerly of The Lygon Arms, Prego and Russell’s in Broadway; The Daffodil in Cheltenham and Daylesford Organic Farm in Kingham.

“We’re determined to bring a fresh approach to selling high quality food and drink." Mr Gates Added.

“Localism might be an overused word, but when it comes to food, at Fillet & Bone we’re absolutely passionate about it.

“There’s such a rich variety of local produce available in and around the Cotswolds, much of it from specialists who truly are deserving of the description ‘artisan’.

“It’s our mission to bring it to the tables of like-minded foodies at a price that’s fair to the producer and affordable to the consumer.

“We can’t wait to welcome all residents of Chipping Campden, and beyond, to Fillet & Bone when we open in the spring.”
